Our organic sardines, caught in the Atlantic Ocean, are carefully selected and prepared traditionally using the freshest fish. They are gutted and the heads are removed by hand. They are then cleaned before being dried on a grill. After deep-frying and then draining to remove excess fat, the tails are cut off by hand before specialist workers remove the bones with a skilful manoeuvre. Finally, they are delicately placed in their tin and covered with extra virgin olive oil, which enriches their flavour and ensures the best preservation. Like a good wine, sardines improve with age because they are preserved in oil. Just keep the tins in a cool place and turn them over about once a month. A tin that has been kept for at least three years is a real gourmet delight. Sardines are naturally rich in Omega 3 and are also a source of calcium if eaten with their bones.
