For the mousse, our friend Jean-Christophe Bott used the Champagne method, which consists of letting the magic happen in the bottle for 7 to 8 weeks (until the sugars run out). Once the mousse has finished, it is aged on slats and fine lees for 24 months. During disgorging, the wine is almost not measured, which is why we can read "extra-brut" on the label. However, this does not make this Crémant a strict wine. On the contrary, it is elegant, delicate, fleshy and delicious (flowers, brioche and buttery notes). A long-lasting wine, with fine and invigorating effervescence, very well balanced, all 100% organic. This sublime and great Crémant d'Alsace has nothing to be ashamed of in front of a Champagne!
